Why is mentuccia essential — can I use regular mint?
Mentuccia (Calamintha nepeta) is a wild herb with a peppery, earthy quality very different from garden mint's sweetness. Using spearmint or peppermint will push the dish into dessert territory. Outside Italy, fresh nepitella is the closest substitute. A 50/50 blend of fresh mint and fresh thyme is the least-bad workaround — use it sparingly.
