Can I use all-purpose flour instead of 00?

Yes. AP flour has more protein and makes a slightly chewier, more rustic pasta — not wrong, just different. 00 gives you the silky texture of restaurant fresh pasta.

Do I need a pasta machine?

No. A rolling pin and patience will get you there — aim for about 2mm thick for fettuccine. A machine lets you roll thinner and more consistently with less effort.

Why does my dough keep springing back when I roll it?
