FAQ · Things people ask

About this recipe.

Should I use anchovies or not?

The Lazio/Roman version includes them and is the internationally dominant recipe; the strictly Neapolitan original omits them. With anchovies the sauce is meatier and more umami-forward — without, it's lighter and more olive-caper driven. Both are valid. This recipe uses them.

My sauce came out way too salty — what went wrong?

You seasoned before tasting. Olives, capers, and anchovies are all heavily preserved in salt. Add no salt to the sauce at any point until it's finished and you've tasted it — it almost never needs any. Salt the pasta water normally; that's the only seasoning point.

Why no cheese?

Italian convention: cheese doesn't go on pasta with seafood, and anchovies count. The sauce is already complete — adding Parmesan or Pecorino would clash with the brine and muddy the flavours.

Can I make the sauce ahead?

Yes. The sauce holds well refrigerated for 3 days. Make it in bulk and just cook fresh spaghetti when serving — the tossing step takes 2 minutes.
