Can I use pancetta or bacon instead of guanciale?

Pancetta is the closest substitute and works well; guanciale has a higher fat content and a more pronounced mineral pork flavour. Smoked bacon changes the dish significantly and is generally avoided in Roman kitchens.

Why absolutely no cream?

Cream masks the egg and cheese flavours, disrupts the emulsion, and makes the sauce heavier without adding anything. The creaminess in proper carbonara comes entirely from the emulsified egg-fat-starch system.

How do I avoid scrambled eggs?

Take the pan completely off the heat before adding the egg-cheese paste. Add hot (not boiling) pasta water gradually and keep tossing. The residual heat from the pasta does the work — the direct flame is too aggressive.
