FAQ · Things people ask

About this recipe.

Round or conical — which shape is correct?

Both are authentic. Palermo shapes them round like a little orange (arancina, feminine, in Palermo dialect). Catania makes them conical, said to echo the shape of Mount Etna. Pick your camp and defend it — Sicilians certainly do.

Can I bake them instead of frying?

Yes, bake at 200°C with a generous spray or brush of oil for 25–30 minutes, turning once. The crust will be less shattering and the colour patchier, but it works. Shallow-frying in about 4 cm of oil is a good middle path: better colour than baking, less oil than deep frying.

What cheese should I use inside?

Caciocavallo is the most authentically Sicilian choice — it melts cleanly and has a mild tang. Fresh mozzarella (not low-moisture) is a fine substitute and easy to find. Cut it into 1.5 cm cubes and pat them dry before filling so they don't introduce extra moisture.

Can I make the components ahead?

Absolutely — this is built for it. The ragù keeps refrigerated for 3 days or frozen for a month. The saffron rice must be chilled overnight anyway. Shaped and breaded arancini can be refrigerated for up to 8 hours before frying, or frozen raw and fried straight from frozen at 165°C for 8–10 minutes.
