FAQ · Things people ask

About this recipe.

Can I use frozen or canned artichoke hearts?

Frozen hearts work well and cut the prep time significantly — thaw fully and pat dry before cooking. Canned hearts in brine are acceptable in a pinch but taste flatter; rinse and dry them thoroughly.

Why did my sformato crack on top?

The oven was too hot or there wasn't enough water in the bain-marie. Keep the temperature at 160°C and make sure the water comes at least halfway up the sides of the molds.

Can this be made ahead?

Yes — bake, cool in the mold, and refrigerate for up to 24 hours. Reheat in a warm water bath or low oven at 150°C for about 15 minutes, and unmold just before serving.

What goes alongside it?

A lightly dressed bitter green salad cuts through the richness well. For a sauce, a simple tomato coulis, warm anchovy butter, or a drizzle of good Tuscan olive oil with herbs all work — keep it simple so the sformato stays the focus.
