  • 40 ml extra-virgin olive oil, for the dough
  • 60 ml extra-virgin olive oil, for the sauce
  • 400 g canned San Marzano tomatoes
  • 80 g dried breadcrumbs
  • 50 ml extra-virgin olive oil, for the pan and finishing

Can I use mozzarella instead of caciocavallo?

It works, but it is not traditional. Mozzarella goes stringy and its milky flavour does not hold up against anchovy and onion. Low-moisture provolone is a closer substitute. If you can find caciocavallo at an Italian grocer or deli, use it.

Are the anchovies mandatory?

In the Palermitano version, yes — they are the backbone of salt and umami. You can leave them out, but the result is a different dish. The Bagheria white sfincione (no tomato, no anchovy) is a legitimate regional variant, just a separate recipe.

Why do I need two rises?

The first rise (bulk fermentation) builds flavour and gluten structure. The second rise in the pan opens the crumb and delivers the characteristic lightness. Skip it and you get a dense, bready result — edible, but not sfincione.

Does it freeze?

Yes. Cut into slices after baking, cool completely, wrap individually, and freeze for up to 2 months. Reheat in a 200°C oven for 10–12 minutes straight from frozen. The breadcrumb topping stays crisp.
