FAQ · Things people ask

About this recipe.

Can I use chicken instead of veal?

Yes — chicken breast pounded thin works well and the cook time is identical. Turkey cutlets are also a traditional home-cooking substitute across Italy. If cost is a factor, chicken thighs pounded flat have more fat and flavour than breast.

What is the difference between scaloppine al limone and piccata?

Piccata adds capers — and sometimes a splash of caper brine — to the lemon-butter sauce. In Italy the two terms are often used interchangeably; in Italian-American cooking piccata specifically means the caper version. To turn this into piccata, stir in a tablespoon of rinsed capers just before plating.

Why does my sauce break and look greasy?

The butter went in while the pan was still over heat. Pull it fully off the burner, add cold butter cubes, and swirl — do not stir — until melted and glossy. If it breaks, add a tablespoon of cold water and swirl off-heat to bring it back.

Can I make this ahead?

The veal is best cooked to order — it goes rubbery if held for more than a few minutes. The sauce can be made up to the wine-reduction stage and finished with cold butter and lemon just before serving.
