Can I use Arborio rice instead of Carnaroli?

Yes, Arborio works but releases starch more aggressively and can turn gluey. Carnaroli gives more control and a creamier result without the grains losing their integrity. Vialone Nano is the classic Veneto alternative if you can find it.

What's the difference between radicchio di Treviso and the round radicchio at the supermarket?

The round compact head (radicchio di Chioggia) is milder and less interesting here. Trevigiano is elongated and more bitter; the tardivo variety, harvested after the first frost (December–January), has narrow curled leaves and is more prized. Precoce (October–November) is more widely available — both work in this recipe.

Can I make this vegan?

Swap the butter for a generous pour of extra-virgin olive oil and stir in a few tablespoons of nutritional yeast instead of the Parmigiano. Less rich, but the bitterness-balance still holds.

Can I finish it with balsamic vinegar?

Some versions in Treviso do exactly that — a few drops of aged aceto balsamico tradizionale at the plate. It adds a sweet-sour note that works well against the bitter radicchio. Don't use young balsamic; the cheap stuff sharpens the bitterness unhelpfully.
