Can I use dried mushrooms only, without fresh?

Yes. Double the dried porcini to about 50 g. The risotto will be deeply flavoured; the fresh mushrooms add texture but are entirely optional.

Arborio vs Carnaroli — does it really matter?

Carnaroli has a firmer centre and higher starch content, so it is more forgiving and gives a creamier sauce. Arborio works well too — just watch the timing closely as it can go soft faster.

Why is my risotto gluey?

Usually over-stirring once the rice is nearly done, or adding too much stock at once. Add by the ladle and stir steadily but not frantically — you want motion, not violence.

Can I make it vegan?

Use olive oil only for the mantecatura and swap Parmigiano for a vegan hard cheese. It loses some richness but the porcini flavour still carries it well.
