Can I use canned beans instead of dried?

What if I can't find cavolo nero?

Cavolo nero is also sold as lacinato kale or Tuscan kale — they are the same thing. If unavailable, regular curly kale is the closest substitute; just remove the tough central ribs. Spinach or Swiss chard will work but the defining bitterness will be milder.

Does ribollita have to be made ahead?
