FAQ · Things people ask

About this recipe.

Can I use pork loin instead of belly?

Yes, loin is leaner and easier to roll. You lose the richness and the self-basting fat. A good middle path is a loin rolled inside a belly: the loin provides structure, the belly provides fat and skin.

Why is my skin not crackling?

Almost always moisture. The skin must be completely dry before it enters the oven. Overnight uncovered in the fridge is not optional. Also verify that your oven actually reaches 230°C — many domestic ovens run 15–20°C cold.

What is wild fennel and where do I find it?

Wild fennel (finocchietto selvatico) has a more intense anise flavour than cultivated bulb-top fronds. It grows in Mediterranean scrubland. Substitute fennel fronds from a fennel bulb, or a small amount of fresh dill plus extra toasted fennel seeds.

How long does porchetta keep?

3 to 4 days refrigerated, and it is arguably better on day 2 once the herbs have fully infused. Reheat slices in a dry hot pan to re-crisp the skin. Never microwave — the crackle is gone in seconds.
