Do I need all four types of seafood?

Clams and mussels are non-negotiable — they produce the broth that makes this dish. Squid and shrimp are canonical but flexible. Do not substitute white fish fillets; they break apart in the sauce and contribute nothing to the broth.

Can I use frozen shellfish?

Fresh is strongly preferred. Live bivalves steam open and release broth; frozen cooked shellfish, already open, add nothing to the sauce and turn chewy by the time the pasta is done.

Why does my sauce turn watery instead of coating the pasta?
