Can I use parsley instead of mint?

No — not if you want authentic cazzilli. Parsley is the herb in Neapolitan-style potato croquettes (crocchè), and substituting it produces a completely different snack. The mint is non-negotiable; it is what makes cazzilli Palermitane recognizable.

Do cazzilli need breadcrumbs?

Authentic cazzilli have no breadcrumb coating. The dry potato surface forms its own crust in hot oil. A light dusting of fine semolina is a modern variation, but the classic street-food version is uncoated.
