Can I use cow's milk ricotta instead of sheep's milk?

Yes, but drain it very well. Sheep's milk ricotta is denser and richer; cow's milk ricotta has more moisture and needs at least 12 hours of straining, or it will make the filling watery and the marzipan shell will sag.

Why is the marzipan green?
