  • 300 g cuttlefish or squid, cleaned and cut into rings and pieces
  • 250 g monkfish fillet, cut into 4 cm chunks
  • 300 g gurnard or scorpionfish, cleaned and portioned (or other firm white fish)
  • 400 g live mussels, scrubbed and debearded
  • 400 g live clams, scrubbed

  • 80 ml extra-virgin olive oil
  • 250 ml Chianti or other dry Tuscan red wine
  • 500 ml fish stock or clam broth

Can I use fewer than five types of fish?

You can, but you'll have a different dish. Three types is workable if you keep the texture classes covered — something firm (octopus or cuttlefish), something meaty (monkfish), something delicate. Substitute within class: squid for cuttlefish, pollock or hake for gurnard. Two types starts to feel like a different stew entirely.

Why red wine and not white?

Livornese tradition and good sense both demand it. The tannins and pigment of a Chianti give the stew its distinctive dark broth and a robustness that white wine cannot achieve. The bold base — garlic, chili, tomato — stands up to it easily. Use an inexpensive Chianti or Morellino di Scansano.

Can I make it ahead?

The base — octopus, cuttlefish, tomato-wine broth — can be made a full day ahead and actually improves overnight. Only add the delicate fish, mussels, and clams just before serving. Reheat the base gently, add the fresh seafood, and serve within 15 minutes of that addition.

What is scorfano and do I need it?

Scorpionfish (scorfano) is the Livornese classic for its gelatinous body and sweet brine flavour. Gurnard (capone) is a practical substitute available at most fishmongers. Neither is strictly required — any meaty white-fleshed fish that holds together through a long braise will do the job.
