Onion or no onion?

The official Amatrice recipe has no onion. The Roman version often adds half an onion. Both are defensible — the original is purer, the Roman version is slightly sweeter. I cook it without.

Can I use pancetta?

Yes. Pancetta is a common substitute, especially smoked pancetta (tesa). The sauce will be less fatty and slightly smokier. It's not traditional but it works.

What wine do I deglaze with?
