Where do I find spring roll wrappers?

Any Asian grocery, in the frozen section. Lumpia wrappers from the Philippines are nearly identical and often easier to find. Thaw in the fridge overnight and separate carefully.

Can I make them ahead?

Roll them up to 4 hours ahead and keep refrigerated on a tray, uncovered so the wrapper dries slightly. Do not freeze assembled rolls -- the filling releases water during freezing.

Why is my filling wet after cooking?

The vegetables released water. Spread the cooked filling on a tray and let it cool completely before rolling. If it looks wet, drain it through a colander.
