Dry-frying, or 'gan bian' in Chinese, is a technique that cooks the beans without adding water or too much oil, allowing their natural sugars to caramelize and their skins to blister. This results in an intensely flavorful, tender-crisp texture that can't be achieved by steaming or boiling.
