FAQ · Things people ask

About this recipe.

Where do I find squash blossoms?

Farmers' markets in summer, specialty grocery stores, and Mexican markets. They are highly perishable — use within 24 hours of purchase. If unavailable, sautéed zucchini or courgette cut into thin strips is a reasonable substitute.

Do I need a press for the masa?

A tortilla press makes perfectly round quesadillas but is not required. Place the masa ball between two sheets of plastic (cut from a zip-lock bag) and press with a heavy skillet or a flat cutting board.

What other fillings work in this style?

Huitlacoche (corn fungus) is the other classic Mexico City quesadilla filling. Mushrooms with epazote, rajas with crema, or just plain quesillo also work. The technique is the same regardless of filling.
