What noodles should I use?

Fresh lo mein noodles from a Chinese grocery, or fresh udon noodles. Dried lo mein noodles also work. Avoid spaghetti -- the texture is too smooth and it does not absorb sauce the same way.

Can I add protein?

Yes. Thinly sliced tofu, velveted chicken, or shrimp all work. Add the protein after the vegetables and before the sauce.

Why does my lo mein taste bland?

Noodles need more seasoning than you expect. Make sure the sauce has enough soy sauce and oyster sauce, and season with white pepper. Taste the sauce before adding the noodles.
