I can't find choricero peppers — what can I substitute?
Choricero peppers are not perfectly replaceable. The closest substitute is ñora peppers (round, slightly sweeter), using about 30% more by count. Alternatively, combine ancho chili (for body) with piquillo peppers (for sweet red pepper note). Avoid paprika alone — it gives color but none of the flesh-body the sauce needs. Authentic choricero peppers are available from La Tienda, Basco Fine Foods, and Spanish specialty grocers.
