Spanish or Italian specialty grocers carry 4g foil sachets. Many fishmongers stock them too. If your squid is very fresh, look for the small silver-black ink sac near the body cavity — it can be pierced directly into the stock. Sachets are the reliable fallback.
Not recommended. Long-grain rice doesn't absorb stock the same way and won't develop the sticky, ink-coated texture that defines the dish. Short-grain alternatives — arborio, Japanese sushi rice — are far better substitutes than jasmine or basmati.
Socarrat is the lightly toasted, slightly crunchy rice crust that forms on the bottom of the pan in the final minutes.
