Where do I find ground crayfish and palm oil in Europe?
Ground crayfish — dried, pulverised freshwater crayfish with an intensely savory, fermented edge — is sold at African and Caribbean food stores. Online you'll find Nigerian and Ghanaian brands. Red palm oil is stocked in Asian supermarkets but African grocery stores carry better quality; look for deep orange-red unrefined palm oil, not the bleached yellow refined version which has lost its flavor. If you genuinely cannot find either: dried shrimp paste stands in for ground crayfish (use half the quantity), and annatto-infused neutral oil gives the color if not the depth of palm oil.
