My rava dosa comes out flat and dense, not lacy. What's wrong?
Almost certainly: pan not hot enough, or batter too thick. The pan must be genuinely hot — water should evaporate on contact with a sharp hiss, not pool or sizzle gently. The batter should be thinner than you think is reasonable. Pour a test ladle: if no holes form in the first few seconds, the pan is too cool or the batter is too thick. Add more water and reheat the pan before trying again.
