What is the difference between rasam and sambar?
Sambar is thicker, vegetable-laden, and functions as a side dish — served with idli, dosa, or alongside rice. Rasam is thin, soup-like, and primarily a digestive broth. It is also more aggressively sour and peppery. They occupy entirely different positions in a South Indian meal.
