Politikí Salata — Cabbage-Carrot-Parsley Slaw

Finely shred the green cabbage. A mandoline or a sharp knife works best for this. Place it in a large bowl.

Peel and grate the carrots. Add them to the bowl with the cabbage.

Finely chop the fresh parsley and add it to the vegetables.

Sprinkle the salt over the cabbage and carrots. Gently massage the vegetables with your hands for 1-2 minutes. This helps to soften them.

In a small bowl, whisk together the Greek extra virgin olive oil, lemon juice, red wine vinegar, and black pepper to create the dressing.

Pour the dressing over the vegetables. Toss everything together until well combined and the dressing is evenly distributed.

Taste and adjust seasoning if needed. Serve immediately or chill for 15-20 minutes for flavors to meld.
