Can I use frozen spinach?

Yes, and it actually works well here. Thaw completely and squeeze out every drop of water, then skip the blanching step. Frozen spinach is already soft enough to blend directly.

Can I skip frying the paneer?

You can, but the texture suffers. Unfried paneer absorbs moisture and turns spongy in the sauce. If you want to avoid frying, at minimum pat the cubes very dry and use them at room temperature.

What can I use instead of paneer?

Firm tofu, fried until golden, is the closest substitute. Halloumi also holds its shape in sauce. Cottage cheese will not work — it breaks down completely.
