- 700 g lamb shoulder, minced (20–25% fat)
- 1 medium yellow onion, grated and squeezed dry
- 1 large egg
- 3 cloves garlic, minced
- 25 g fresh flat-leaf parsley, finely chopped
- 10 g fresh mint, finely chopped
- 1.5 tsp ground cumin
- 1 tsp ground allspice
- 0.5 tsp ground coriander
- 0.3 tsp ground cinnamon
- 0.3 tsp cayenne pepper
- 1.5 tsp kosher salt
- 0.5 tsp black pepper, freshly ground
- 30 g pine nuts, toasted and roughly chopped
Yogurt-Cucumber Sauce
- 200 g full-fat Greek yogurt
- 1 medium Lebanese or Persian cucumber, grated and squeezed dry
- 1 clove garlic, minced
- 2 tbsp fresh mint, finely chopped
- 1 tbsp lemon juice, freshly squeezed
- 0.5 tsp kosher salt
- 1 tsp extra-virgin olive oil
Sumac-Onion Salad
- 1 medium red onion, very thinly sliced
- 1.5 tsp ground sumac
- 20 g fresh flat-leaf parsley, roughly chopped
- 1 tbsp lemon juice, freshly squeezed
- 0.3 tsp kosher salt
