What is kudampuli and where do I find it?
Kudampuli (also called Malabar tamarind or fish tamarind) is the dried rind of Garcinia cambogia — dark, thin, and intensely sour. It is the defining souring agent of Kerala fish curries and gives a flavour that regular tamarind cannot replicate. Find it at Indian grocery stores, usually labelled as kodampuli or gamboge. Soak it in warm water for 10 minutes before using.
