What is the difference between dhokla and khaman?
Technically, khaman is a variety of dhokla made from chickpea flour with Eno, while traditional dhokla uses a fermented rice-and-chana-dal batter soaked and ground overnight. In everyday usage outside Gujarat the terms are used interchangeably. What most people call dhokla in snack shops, restaurants, and online recipes is actually khaman — the version in this recipe.
