Arme Ritter (German French Toast)

In a shallow dish, whisk together the eggs, milk, sugar, and vanilla sugar until well combined.

Dip each slice of bread into the egg mixture, ensuring both sides are thoroughly soaked but not falling apart. Let any excess drip off.

Heat butter in a non-stick frying pan over medium heat. Place the soaked bread slices in the hot pan and fry for 3-4 minutes per side, until golden brown and cooked through.

Once cooked, transfer the Arme Ritter to plates. Sprinkle generously with a mixture of cinnamon and sugar. Serve warm with Apfelmus or fresh fruit.
