Obatzda mit Brezn (Bavarian Cheese Spread with Pretzels)

Remove the rind from the Camembert cheese and cut it into smaller pieces. In a bowl, combine the Camembert, cream cheese, and room temperature butter. Mash them together with a fork until mostly smooth. A few small lumps of Camembert are fine.

Peel and very finely chop the quarter onion. Add the chopped onion to the cheese mixture. Incorporate the sweet paprika powder, hot paprika powder (if using), ground caraway seeds, salt, and black pepper. Mix thoroughly until all ingredients are well distributed.

If desired, add a tablespoon of light lager beer to the mixture. This adds a slight tang and helps to achieve a creamier consistency. Mix well until everything is combined. Taste and adjust seasoning if necessary; you might want more salt or paprika depending on your preference.

Transfer the Obatzda to a serving dish. You can shape it into a dome or simply spread it. Garnish with a sprinkle of paprika powder or a few more caraway seeds if desired. Serve immediately with fresh pretzels (Brezn), rye bread, or radishes.
