Wurstsalat mit Brot (Sausage Salad with Bread)

Peel the skin from the Lyoner or Fleischwurst sausage. Slice the sausage into thin strips or julienne it. Finely slice the red onion into thin rings. Slice the gherkins into thin rounds.

In a large bowl, combine the sliced sausage, red onion, and gherkins.

In a separate small bowl, whisk together the white wine vinegar, sunflower oil, Dijon mustard, salt, and pepper until well combined to form the dressing.

Pour the dressing over the sausage mixture and toss gently to ensure everything is evenly coated. Stir in freshly chopped chives. Let the Wurstsalat marinate for at least 15 minutes before serving. Serve chilled with fresh rye bread.
