Klassische Pfannkuchen mit Apfelmus (Classic Pancakes with Applesauce)

In a large bowl, whisk together the flour, sugar, and pinch of salt. In a separate bowl, lightly beat the eggs and then whisk in the milk.

Gradually add the wet ingredients to the dry ingredients, whisking until you have a smooth batter. Let the batter rest for 10-15 minutes at room temperature to allow the flour to hydrate.

Heat a small amount of oil or butter in a non-stick frying pan over medium heat. Pour about a ladleful of batter into the pan, tilting to spread it evenly into a thin circle (about 20-25 cm diameter).

Cook for 2-3 minutes per side until golden brown. Repeat with the remaining batter, stacking the finished Pfannkuchen on a plate to keep warm. Serve immediately dusted with powdered sugar and a generous dollop of Apfelmus.
