Maultaschen 'geschmelzt' (Pan-Fried Maultaschen with Onions)

If using fresh Maultaschen, cook them in boiling salted water for 8-10 minutes until they float and are tender. Drain well. If using pre-cooked Maultaschen, simply slice them.

While Maultaschen are cooking, peel and thinly slice the onion into rings. Melt half of the butter in a large frying pan over medium heat. Add the onion rings and fry gently, stirring occasionally, until golden brown and caramelized (about 10-12 minutes).

Slice the cooked Maultaschen into thick strips or cubes. Add the remaining butter to the pan with the onions. Add the sliced Maultaschen and fry for 5-7 minutes, turning occasionally, until they are lightly browned and slightly crispy.

Season with salt and pepper to taste. Remove from heat and stir in freshly chopped chives. Serve hot, typically as a stand-alone dish or with a side salad.
